Dried Udad Dal Recipe

Dry Urad Dal (Dried lentils)

There are three types of Urad Dal:

  1. Whole urad
  2. split black urad with skin
  3. Urad washed

Urad dal has black skin, while the inside is creamy white. This white lentil is rich in protein and the iron content is good for improving hemoglobin count. Urad dal is great for vegan and low fat diets. This recipe will be using the Urad washed dal which is white is color.

Preparation Time: 25 minutes (approx)

Serving: 2-4

Ingredients:

  1. a. 1 cup Udad wash dal – Wash dal changing water several times till water becomes clear. Drain the excess water..……..(check in aisle 1)
  2. 1 big onion chopped into fine pieces
  3. 1 Tablespoon ginger slices
  4. 6 cloves garlic, finely chopped
  5. e. ½ teaspoon Asfoetida (hing)………………………. (check in aisle 1)
  6. f. 1.25 teaspoon Salt – adjust to taste …………………………….(check in aisle 2)
  7. g. ½ teaspoon red chilli powder ……………….(check in aisle 2)
  8. h. ¼ teaspoon turmeric powder ……………….(check in aisle 2)
  9. i. ½  teaspoon kasturi methi ……………………(check in aisle 2)
  10. j. 1 teaspoon cumin seeds ……………………(check in aisle 2)
  11. k. 2 whole cloves …………………………………(check in aisle 2)
  12. l. 1 small piece of cinnamon stick (1-2 inch piece) ……………….(check in aisle 2)
  13. m. 1 cardamom crushed ……………………………..(check in aisle 2)
  14. n. ¼ teaspoon black pepper powder ………………(check in aisle 2)
  15. 3 tablespoon cilantro, finely chopped
    1. p. Ghee (Clarified butter) –  3 tablespoon — (Check in aisle 6)
    2. q. 2 Thai Green chilli chopped only if you like spicy – (check in refrigerator)
    3. r. Garam masala ……… (check in aisle 2)

Method

  1. Take a deep vessel, put it on gas. Add Ghee to the vessel. Now when the ghee is heated, add chopped onions, chopped garlic and chopped ginger to it, till the onions turn light brown.  Now slow the gas, when the onions have turned light brown.
  2. Now add Asofoetida, cumin seeds, whole clove, cardamom crushed, cinnamon stick and salt, turmeric and red chilli powder to the mixture.
  3. Now add 1 ¼ cup water to the vessel and then add the udad dal. Turn the heat to high and let the mixture to boil. Cover the vessel for 5 minutes, so the lentil becomes soft. You might see bubbles of water coming out of the vessel, if that happens lower the gas.
  4. Uncover the vessel after 5 minutes and boil away all the water till you get the dried dal. Garnish it Cilanto and sprinkle Garam masala.
  5. Serve the dal with Roti’s or Naan.
